Being a Mum is like flying a kite, you never know which way it is going to turn, it can turn really fast and end up crashing. Or it can just float happily and peacefully in one place, or simply sway from side to side

A Yummy Apple Cake

I know I shouldn’t really follow the weight loss post with such a yummy looking cake. But as I have said before, every thing in moderation, you can have a small piece, it does have apples in it, and we all know that they have great health benefits. :)

Ingredients

140g softened butter
200g caster sugar
2 eggs, beaten
200g self-raising flour
1/2 teaspoon ground cloves
1/4 teaspoon grated nutmeg
450g Granny Smith Apples (Green), peeled, cored and thickly sliced
Icing sugar to dust

Putting it all together

1. Heat oven to 180℃/350℉ or 160℃/320℉ fan forced. Line your cake tin, a deep, 20cm round tin.
2. Put the butter and sugar into a large bowl and beat together until pale and creamy.
3. Add the eggs, a little at a time, mix until light and fluffy.
4. Mix the flour with the cloves and the nutmeg, then fold into the egg mixture.
- You should now have the apples chopped, the mixture and your lined cake tin


5. Spread half the mix over the bottom of the tin, then cover with the apple slices.


6. Dot the rest of the mixture over the apples.


7. Bake for 1Hr 30Mins or until a skewer comes out clean. It will get quite dark on the top before it is done in the middle.
8. Leave the cake in the tin to cool, and dust with the icing sugar.

It is nice eaten warm and I often make it as a dessert when I have people come over, it always seems to be a winner.
