Being a Mum is like flying a kite, you never know which way it is going to turn, it can turn really fast and end up crashing. Or it can just float happily and peacefully in one place, or simply sway from side to side

Mmmm Cookies

As I mentioned in a previous post, my Dad is a chef, well we spent the weekend with them last weekend, and The little man and his Grandad decided to do a spot of cooking, they made these pinwheel biscuits. The little man had a great time and I think Grandad might have had just as much fun.

Ingredients

4oz Butter or Margarine
4oz caster sugar
1 Egg, beaten
8oz flour
1/2 oz cocoa

Putting it all together

1. Cream the butter and sugar until pale and fluffy. add the egg a little at a time, beating after each addition.
2. Stir in the flour and mix to a fairly firm dough.
3. Divide the mixture in half.
4. Knead 1/2 oz of cocoa into one of the 1/2s
5. Roll both halves out into equal sized oblongs and put the chocolate piece on top of the plain.
TIP - If you don’t really want flour everywhere when rolling it out, you can use kitchen wrap and place the dough in the middle and roll it. I won’t stick to the rolling pin, the wrap or the board.

6. Roll up like a swiss roll and leave in a cool place (fridge) for 30 mins, to become firm.

TIP - Roll up on the kitchen wrap, when rolled together just wrap in the kitchen wrap and place in the fridge.

7. Pre heat oven to 180℃/350℉
8. Cut the roll into slices approx 1/2 centimeter thick, put these on a baking sheet, cut side down and bake for 15-20mins

Very Yummy!, taste testers verified that they were pretty good.

The Little Man even “helped” with the washing up!
