Being a Mum is like flying a kite, you never know which way it is going to turn, it can turn really fast and end up crashing. Or it can just float happily and peacefully in one place, or simply sway from side to side

Bangers and Beans Made in Just One Pot.

This is a great recipe when you are in a hurry, you want something filling, and you don’t want to make a big mess in the kitchen. It is very quick, easy, and very tasty.

If you are not sure what a Banger is, it is a Sausage, it is best to use good quality thick sausages for this recipe, as they make it taste better.

Ingredients

1 tablespoon Olive Oil
8 good quality pork sausages (you can you beef if you prefer)
2 carrots, peeled, halved length ways and sliced
2 onions, finely sliced
2 tablespoons red wine vinegar
2 x 410g cans of 4 or 5 bean mix, drained and you can rinse if you like
400mls chicken stock
100g frozen peas
2 tablespoons Dijon Mustard

Putting it together

1. Heat the oil in large saucepan. sizzle the sausages for about  minutes, turning occasionally, until brown on all sides, then remove to a plate.
2. Tip the carrots and onions into the pan, cook for 8 minutes, stirring occasionally, until the onions are soft.
3. Add the vinegar tot he pan, then stir in the drained beans.
4. Pour in the stock, return the sausages to the pan, cover and simmer for about 10 minutes.
5. Scatter in the frozen peas, cook for a 2 minutes more until heated through, then take off the hear and stir in the mustard. Season to taste.
6. Serve scooped straight from the pot.


Enjoy! It is a really tasty dish, I just had it for my dinner, Yum!.  Again the picture doesn’t really do it justice, but it gives you an idea.
